Arrive Chaozhou, continuously inhabited for 1,700 years. Guangji Bridge walk — China's first built-in floating bridge (1171 CE), still partially operational. Afternoon: Paifang Street — 23 stone memorial arches across 2.45km. Evening: Teochew opera performance.

Learn

Chaozhou's urban fabric has barely changed since the Song Dynasty. Students read the Paifang arches as social history — who was memorialised, who was excluded, and what values a society chooses to carve in stone. Why has Teochew opera survived while thousands of other regional traditions disappeared?

Community activity

Morning clean of the Guangji Bridge stone walkway with Chaozhou Heritage Conservation volunteers, recording inscriptions and decorative motifs for the city's ongoing heritage mapping project.

Day 2 — Raoping ceramics
On the ground

Visit a working Raoping kiln — blue-and-white porcelain produced since the Tang Dynasty. Watch a master throw, trim, and glaze in a single session. Afternoon: Chaozhou embroidery workshop, one of China's four great regional needlework traditions and a UNESCO Intangible Cultural Heritage.

Learn

Raoping porcelain was excavated from shipwrecks across Southeast Asia, the Middle East, and East Africa. Students trace one trade route on a map and calculate sea voyage time using pre-modern sailing speeds.

Community activity

Help sort and catalogue the Raoping Ceramics Museum's community donation archive under curator supervision — identification, photography, and basic database entry.

Day 3 — Free morning & departure
On the ground

Free morning in Chaozhou old city. Return to Shenzhen/Guangzhou afternoon.

Learn

Teochew cuisine is its own civilisation — hand-pulled rice noodles, oyster omelette, Chaozhou cold crab. Eat at a morning tea house, not a restaurant.

Community activity

2-hour Raoping blue-and-white porcelain painting workshop — students paint a traditional botanical motif using cobalt oxide slip; tiles are glazed, fired, and photographed within 2 weeks.

Chaozhou has five UNESCO-nominated elements of Intangible Cultural Heritage — more per capita than almost any city in China. Paifang Street at night, lit for a temple festival, is one of the most visually extraordinary street scenes in southern China.

Day 2 — Hakka villages & tofu science

Hakka earth tower villages — the square courtyard variant found across northern Guangdong. Afternoon: visit a traditional Danxia tofu farm, where the red soil produces a uniquely flavoured soybean.

A Hakka walled village houses an entire clan — typically 50–200 families — in a single defensive structure with communal granary and ancestral hall. What does the architecture tell you about the threats the builders expected?

Community activity

Help elderly Hakka villagers harvest and dry medicinal herbs, recording names, traditional use, and collection method for a community knowledge archive.

Day 3 — Sunrise & departure
On the ground

Danxia morning hike to sunrise viewpoint (05:30). Return to Shaoguan for lunch, then Guangzhou/Shenzhen.

Learn

Danxia, Karst (Guilin), and granite (Huangshan) — three completely different mountain types found in southern China. Students draw a comparative geology chart of rock type, formation age, and erosion process.

Community activity

2.5-hour Hakka tofu-making workshop — grinding soybeans, cooking milk, adding natural coagulant, pressing curds, and eating the result fresh.

Kaiping men emigrated to California goldfields, Canada, and Southeast Asia from the 1850s, returning wealthy and building towers that declared success while defending against bandits. "This building is an argument. What is it arguing — and to whom?"

Community activity

Morning visit to the Kaiping Overseas Chinese Museum volunteer archive — sorting and digitising donated photographs, creating catalogue entries for an unsearchable collection.

Day 2 — Li Garden & mangroves
On the ground

Li Garden — a 1936 private garden blending a Venetian-style villa with a Chinese garden. Afternoon: Shuikou Mangrove Nature Reserve guided ecology walk — canopy density, species ID, water salinity.

Learn

Mangroves store up to 4× more carbon per hectare than tropical rainforest, and are one of the fastest-disappearing ecosystems. Students calculate the carbon storage of a 1-hectare mangrove patch and examine why shrimp farming is their greatest threat.

Community activity

Plant mangrove propagules in a designated restoration section — minimum 10 per participant, each GPS-tagged for a 12-month growth monitoring programme.

Day 3 — Taishan & departure
On the ground

Taishan city morning (optional) — buildings even more extraordinary than Kaiping's. Return to Guangzhou/Shenzhen afternoon.

Why is Cantonese dim sum so distinctive? Students investigate Guangdong's trade-port history and the social function of "yum cha" culture in shaping a cuisine that's simultaneously everyday and highly technical.

2-hour Kaiping wonton-making workshop — wrappers from scratch, folding and filling 20 wontons each, cooked in pork bone broth.

Day 2 — Bamboo raft & cormorant fishing
On the ground

A 3-hour bamboo raft journey through the karst landscape, watching traditional cormorant fishing. Afternoon: Moon Hill hike, a limestone arch formed by differential erosion.

Learn

Trained cormorants have caught fish for Chinese fishermen for at least 1,300 years — one of the world's oldest human-animal working relationships. Is this tradition compatible with animal welfare, and what does its survival depend on?

Community activity

Help plant bamboo along the Yulong River bank — a community-led erosion prevention project, GPS-tagging each shoot.

Day 3 — Countryside & departure
On the ground

West Street briefly, then cycling the back roads through rice paddies and karst peaks. Lunch at a village family restaurant. Return to Guilin for train.

Learn

The Li River landscape appears on the 20-yuan banknote. Students compare photographs from the same viewpoint across decades and discuss what has and hasn't changed.

Community activity

2-hour traditional paper-cutting workshop at a village craft cooperative — a "double happiness" pattern, then a freehand karst landscape pattern.

Rammed earth construction uses local subsoil mixed with sticky rice, brown sugar, and egg white as binding agents, achieving compressive strength comparable to concrete. Students conduct a simple strength test on provided earth samples.

Community activity

Help local families document their tulou's interior for the Yongding Tulou Conservation Authority's urgent condition survey.

Day 2 — Chengqi Building & Oolong tea
On the ground

The largest single tulou, housing 72 apartments across 4 concentric rings. Then: Oolong tea plantation walk and processing workshop, requiring precise monitoring of temperature, humidity, and leaf bruising.

Learn

Oxidation converts catechins into theaflavins and thearubigins — compounds responsible for flavour and colour. Students monitor oxidation at 15-minute intervals and identify the optimum stopping point.

Community activity

Learn a traditional Hakka folk song from elderly residents and perform it back to the community — a genuine cultural transmission exercise for a tradition at risk within one generation.

Day 3 — Hekeng cluster & departure
On the ground

Hekeng Tulou Cluster, less visited and more atmospheric. Return journey with optional stop in Zhangzhou or Xiamen.

Learn

Every family in a round tulou has the same-sized apartment and equal access to the courtyard. What does that tell you about Hakka community values, compared to a modern apartment block?

Community activity

3-hour Oolong tea oxidation and rolling workshop — bruising, monitoring, hand-rolling to the traditional "ball" shape, and charcoal-drying. Tea bagged and taken home.

Day 2 — Fishing village & fortress
On the ground

Visit an active fishing family, observing fish salting (a 2,000-year-old technique). Afternoon: Nan'ao Ancient Fortress, Ming Dynasty coastal defence architecture built in 1576.

Learn

China has the world's largest fishing fleet and the South China Sea faces severe overfishing pressure. Students examine a simplified stock assessment model and compare artisanal vs. industrial trawling.

Community activity

Marine debris survey using the CSIRO methodology, contributing to the China Marine Litter Monitoring Network, with removal and responsible disposal.

Day 3 — Free swim & departure
On the ground

Morning free swim or reef snorkel. Return to mainland by ferry and bullet train.

Day 3 — Bamboo Sea & departure
On the ground

Guangning Bamboo Sea, Guangdong's largest bamboo forest at over 50,000 hectares. Return to Guangzhou/Shenzhen afternoon.

Modern humans lived in the Pearl River valley 140,000 years before agricultural civilisation began in northern China — what does that mean for how "Chinese civilisation" is usually taught?

Community activity

2-hour river pebble painting workshop with mineral pigments, botanical designs inspired by the forest plants identified earlier.

The canyon at Fengkai is virtually unknown to outside tourists — bring enough water and no expectations. The reality is better than anything the internet shows.

The "ganlan" elevated platform system distributes load across a web of interlocking timber with no single load-bearing column. Why is this more resistant to earthquake and flood than a column-and-beam system?

Help transcribe oral history recordings — bridge construction techniques and festival customs — into a community archive document with a bilingual guide.

Day 2 — Indigo dyeing & polyphonic choir
On the ground

Natural indigo dyeing workshop (4 hours) — a 1,000-year-old tradition. Students harvest leaves, ferment the pigment, and dye a silk handkerchief. Afternoon: a Dong polyphonic choir performance, a UNESCO Representative Intangible Cultural Heritage.

Learn

Indigo requires reduction to a soluble "leuco-indigo" form before it bonds to fabric. Students observe the reduction process and measure pH — why does indigo turn from yellow-green in the bath to blue in the air?

Record a Dong polyphonic song with community consent, then help create a bilingual song card with lyrics and notation for the village's heritage archive.

Day 3 — Ancient village & departure
On the ground

Mapang Ancient Village, a 400-year-old Dong village of original timber buildings. Return journey to Guangzhou/Shenzhen.

Learn

Dong polyphonic singing has no leader, no written score, and no conductor — learned entirely by ear. How does the group stay together, and what does that tell you about music as community technology?

Community activity

4-hour full indigo dyeing workshop — harvest through wax-resist batik to a finished 20×20cm silk piece, with the full oxidation-reduction chemistry explained.

Built from 1271 CE, the terraces cover 66 square kilometres and are entirely gravity-fed and self-regulating. Students trace a water channel from source to lowest terrace, calculating a total vertical drop of ~800m.

Community activity

Help Zhuang farmers repair a damaged terrace wall using traditional dry-stacked stone, guided by a master builder — one of Longji's most urgent conservation needs.

Day 2 — Zhuang textiles & Yao village
On the ground

Zhuang brocade textile workshop — produced on a floor loom using a pattern card system predating the Jacquard loom. Afternoon: Dazhai Yao village long hair ceremony cultural performance.

Learn

Brocade patterns encode clan identity, ritual function, and cosmology. Students identify 3 motifs and compare pattern as cultural memory to pattern as commercial brand identity.

Community activity

Longji Terrace Ecology Monitoring — a standardised water quality and biodiversity survey at 5 terrace water points, contributed to a long-term university study.

Day 3 — Golden Buddha Ridge & departure
On the ground

Final morning hike to the highest terrace viewpoint. Return to Guilin for bullet train.

Learn

The terraces have produced sticky rice for 700 years without depleting soil fertility, thanks to a "rice-fish-duck" system — a FAO Globally Important Agricultural Heritage System. Students diagram the nutrient cycle.

Community activity

2-hour Zhuang brocade weaving workshop on a traditional floor loom, reading a pattern card explained as an analogue predecessor of digital binary code.

Day 2 — Xiamen University & botanical garden
On the ground

Zhongshan Road's Baroque-and-shophouse "qilou" arcade. Xiamen University campus, built in 1921 by philanthropist Tan Kah Kee. Afternoon: Nan Putuo Temple and botanical garden ecology walk.

Learn

Tan Kah Kee donated the equivalent of his entire fortune to build Xiamen University and dozens of schools across Fujian and Southeast Asia. What does his life tell us about diaspora wealth, educational investment, and national identity?

Community activity

Volunteer literacy tutoring at the Gulangyu Community Learning Centre, helping elderly residents (75+) with digital literacy — smartphones, WeChat, video calling.

Day 3 — Coastal ecology & departure
On the ground

Huandao Road coastal ecology walk and sea-watching for the critically endangered Chinese white dolphin. Return train to Shenzhen/Guangzhou.

Learn

Traditional Chinese ink is produced by burning pine resin, collecting the soot, and binding it with hide glue. Students grind an ink stick, observe carbon particle dispersion, and practise calligraphy strokes.
