What does the layout of a Huizhou courtyard tell you about family structure, gender roles, and social hierarchy in Ming China? Students sketch one building and annotate 3 architectural choices with their social meaning.
Morning clean of a section of the village stone path alongside local preservation volunteers, discussing what everyday objects found reveal about historical life.
Hongcun Moon Pond walk. Traditional ink painting workshop (2 hours). Afternoon: Huangshan tea plantation visit — harvest a handful of leaves, process them, and understand the economics and ecology of China's most famous export.
Students map the supply chain of a kilogram of Huangshan Maofeng tea — farm to export. What share of the final price reaches the farmer? How has mechanisation changed the industry?
Plant seedlings in the community tea garden as part of a local reforestation initiative, each labelled with a tag to be photographed in 6 months and shared back.

How does a 600-year-old village survive into the 21st century? Is tourism saving or destroying it? Students write a 100-word "policy recommendation" for Hongcun's next mayor.
Leave a handwritten postcard at the village guesthouse for the next international visitor — a note about what you discovered that most tourists miss.
2-hour Huizhou woodblock printing workshop — students carve a simple pattern into a balsa block, proof it in red ink, and take home a printed bookmark and the block they made.
Theme: Ecology, conservation ethics, imperial history, and community waterway care — one of China's most historically layered river cities paired with a hands-on wildlife encounter.
Arrive Nanjing. Visit Hongshan Forest Zoo's Rare Animal Conservation Centre — a research facility for Chinese alligators, red pandas, and Yangtze soft-shell turtles. Afternoon: Sun Yat-sen Mausoleum, 392 steps.
What is the difference between a zoo and a conservation centre? Students compare IUCN Red List status for 3 animals seen today and discuss what would need to change for each population to recover.
Morning litter audit of a 100m stretch of the Purple Mountain trail, results submitted to the Nanjing Urban Ecology Monitoring Project.
Travel to Yangzhou. Slender West Lake by electric boat, observing canal ecology and garden design. Afternoon: Yangzhou lacquerware workshop (2 hours) — one of China's oldest industrial chemistry traditions.
How does a Chinese garden differ from a Western one in its relationship to nature? Suzhou and Yangzhou gardens "borrow" views — what does that concept tell you about Chinese aesthetics?
Canoe or paddle with the Yangzhou Waterway Volunteer Network, collecting floating waste and logging water quality observations in a shared city database.
Yangzhou morning: Grand Canal Museum, the world's longest and oldest canal. Afternoon: return to Shanghai.
The canal connected Beijing to Hangzhou for 1,400 years. What goods flowed north and south, and how did controlling the canal mean controlling China?
Write a message for the "Future Letters" box at the Grand Canal Museum — a note to someone reading it in 100 years.
2-hour Yangzhou lacquerware inlay workshop — students create a small decorative tile using traditional dry lacquer and mother-of-pearl inlay, guided by a certified artisan.
Theme: Earth science, ancient urban planning, fermentation chemistry, and waterway community service.
Arrive Shaoxing. Lu Xun's Former Residence neighbourhood walk. Afternoon: Keyan Scenic Area, ancient stone quarries turned water labyrinth — rowing boat through the flooded quarry.
Lu Xun wrote "there is no road at first — but when many people walk the same way, it becomes a road." Students choose one story concept from his biography and write a modern equivalent.
Morning boat clean of the Keyan quarry lake alongside local environmental volunteers, testing water transparency before and after.
East Lake & Shaoxing wine museum. Shaoxing rice wine has been produced for 2,500 years — visit a working winery and conduct a fermentation science workshop. Afternoon: ancient city wall walk.
What is happening at a molecular level when rice wine ferments? Students diagram the process — glucose → ethanol + CO₂ — and discuss why temperature control mattered so much in ancient Chinese industry.
Help reseed a section of the wetland reed bed along the Jianjiu River — reed beds filter water, support bird habitat, and reduce flooding. Minimum 20 reeds each.
If timing allows: Qiantang River Tidal Bore observation. Otherwise: Shaoxing bronze museum. Return to Shanghai afternoon.
The Qiantang bore is caused by the funnel shape of Hangzhou Bay. Students draw the geography, explain wave amplification, and calculate when the year's largest bore will occur.
Final reflection: what has stayed the same in Shaoxing across 2,500 years — and what has changed completely?
2.5-hour rice wine fermentation workshop at a local distillery — students blend their own recipe of glutinous rice, water, and starter culture, seal it, and receive a follow-up photo in 2 weeks.
Theme: Technology ethics, natural ecology, Daoist philosophy, and environmental community service.
Arrive Hangzhou. West Lake morning, a designated UNESCO Cultural Landscape. Afternoon: Hangzhou National Tea Museum, tea economics and ceremony workshop (1.5 hrs).
West Lake has been redesigned by human hands for 1,000 years — is it still "natural"? Students map the tension between "authentic heritage" and "maintained beauty," and apply it to a landmark in their own city.
Participate in West Lake's monthly volunteer clean — a two-hour shoreline and footpath clean, joining the data-logging team.
Travel to Anji. Bamboo Sea guided ecology walk — growth biology, carbon sequestration science, and rural livelihoods. Afternoon: bamboo craft workshop (lampshade or phone stand).
Bamboo sequesters carbon 30% faster than most trees and can be harvested without killing the plant. Students calculate the carbon offset of one hectare of Anji bamboo forest over 10 years.
Assist local farmers in Anji's bamboo replanting programme, planting a minimum of 5 shoots each, GPS-tagged for satellite monitoring.
Anji to Shanghai return. Optional: Anji White Tea farm visit — one of the most expensive teas per gram on earth.
Anji White Tea sells for ¥5,000–50,000 per 500g versus commodity tea at ¥50/500g. What determines premium pricing? Students construct a simple value chain diagram.
Plant a bamboo shoot in the hotel courtyard's "visitor grove," maintained specifically for programme participants with a QR-coded planting record.
2-hour bamboo craft workshop — students design and construct a small lampshade or phone stand using pre-cut bamboo strips, traditional joinery (no glue), and natural twine.
Theme: Textile science, social history, canal ecology, and a community oral history project.
Arrive Tongli. Canal town walk identifying the three types of stone bridge — arch, flat, pavilion. Visit Tuisi Garden, UNESCO World Heritage. Afternoon: canal evening lantern walk.
Tongli has 49 bridges across 15 canals. Students measure the span of 3 bridge types by pacing and sketch a simple load diagram for an arch bridge.
Work with the Tongli Heritage Conservation Office to transcribe handwritten community records — receipts, letters, birth records — into a digital archive.
Suzhou Silk Museum (2 hrs) — from silkworm to bolt. Afternoon: traditional silk hand-weaving workshop on a restored Qing-dynasty loom (2 hrs). Students weave a 15cm sample.
What makes silk stronger than steel of the same weight? Students examine the protein structure of fibroin under microscope and compare it to nylon, cotton, and bamboo fibre.
Assist the Suzhou Embroidery Research Institute's thread-sorting and restoration team, cleaning and re-labelling historical thread collections from pre-1949 archives.
Free morning in Suzhou (Pingjiang Road, Pan Gate, or Humble Administrator's Garden). Afternoon: return.
How does the Suzhou canal system work? Students trace water flow from Taihu Lake through the canal network, identifying gates and locks for flood control versus navigation.
Interview one Tongli resident over 70 about what the town looked like before tourists arrived, sharing the recording with the Tongli Oral History Archive.
2-hour traditional silk hand-weaving session on a restored Qing-dynasty foot-pedal loom, guided by a master weaver certified by the China Intangible Cultural Heritage programme.

Xuanwu Lake wetland ecology walk with Nanjing Bird Watching Society. Spring/autumn migration sees 50+ species in 2 hours.

2-hour citizen science bird monitoring session with Nanjing Bird Watching Society — standardised point-count methodology contributing real data to the East Asian–Australasian Flyway monitoring programme.
Theme: Earth science, traditional ink painting, landscape philosophy, and mountain trail maintenance volunteering.
Depart Shanghai early. Cable car to mid-mountain. Evening: cloud-sea observation, one of China's four great natural phenomena. Early sleep for sunrise.
Huangshan's cloud sea forms when warm humid air meets cool mountain air. Students draw a cross-section diagram of orographic lift, condensation, and inversion layer.
Join the Huangshan Scenic Area Volunteer Trail Team, clearing debris from stone steps and removing invasive plant species.
Sunrise at Dawn Pavilion (05:30). Morning: West Sea Grand Canyon hike, 3 hours. Afternoon: traditional Chinese landscape painting workshop — the 5 essential ink tones and 留白 (liubai, the power of empty space).
In shanshui painting, the mountain is never fully depicted — space is left for the viewer's imagination. Students analyse a classic Huangshan painting and identify what the artist left out, and why.
Afternoon trail clean of the West Sea Canyon lower path, one of the most littered sections — data submitted to the Huangshan Plastic Monitoring Programme.
Descend by cable car. Transfer to Tunxi Old Street. Afternoon train to Shanghai.
Huangshan's granite peaks formed 100 million years ago, shaped by glacial action during the last ice age. Students identify 3 geological features on the trail.
Leave a painted "trail marker" — a stone painted with an encouraging message in Chinese and English — at the base of one of the steepest trail sections.
2-hour traditional shanshui ink painting workshop at a certified mountain studio — brush pressure, water ratio, and ink dilution, completing a small Huangshan pine study.
Theme: Song Dynasty urban history, agricultural science, hot spring geology, and community food security data collection.
Arrive Kaifeng. Qingming Riverside Landscape Garden, a recreation of the Song Dynasty capital from China's most famous painting. Evening: night market at Drum Tower Square.
The Song Dynasty (960–1279 CE) had paper money, restaurants, nightlife, and a middle class 800 years before Europe's Industrial Revolution. What economic structures have survived to today?
Volunteer at Kaifeng Community Kitchen, helping prepare and distribute free meals to elderly residents — the kitchen feeds 200+ residents, 7 days a week.
Iron Tower — an 11th-century glazed brick pagoda. Afternoon: Yellow River Wetland Nature Reserve, collecting water quality and sedimentation data for the Yellow River Citizen Science Monitoring Programme.
The Yellow River carries the most sediment of any river on earth — 1.6 billion tonnes per year. Students calculate silt volume deposited annually using the data they collect.

Help stock and organise the Community Kitchen's weekly ingredient delivery, sorting and logging donated produce for the kitchen manager.
1.5-hour Chinese medicine herb identification workshop — students identify 8 medicinal herbs, prepare a herbal tea blend, and write a "prescription card" for each.

Arrive Jingdezhen, "Porcelain Capital of the World" for 1,700 years. Imperial Kiln Museum. Afternoon: hands-on pottery throwing and hand-painting workshop (3 hrs).
What makes Jingdezhen kaolin clay different? Students test clay hardness, plasticity, and firing colour at different temperatures — why does porcelain become translucent at 1,300°C when earthenware does not?
Assist the Imperial Kiln Archaeological Excavation public volunteer programme — sieving and sorting soil from active dig sites under archaeologist supervision.
Travel to Poyang Lake. Winter months: crane and migratory bird monitoring with the Poyang Lake Wetland Research Station — standardised transect counts.
Poyang Lake has shrunk by 90% in drought years due to upstream dams and climate change. Students map the lake's area across 30 years using satellite data — what does this mean for 700,000 dependent migratory birds?

Nomadic culture is a highly sophisticated adaptation to a fragile ecosystem. Students study how seasonal migration prevents grassland degradation, compared to modern ranching's environmental impact.
Work with the Inner Mongolia Grassland Restoration Project, planting native grass species in an over-grazed area as part of a comparative restoration experiment.
Transfer to Xilamuren Grassland. Ger (yurt) stay begins. Afternoon: horse riding basics and a grassland transect ecology survey.
The Mongolian steppe is one of the world's largest intact grassland ecosystems. Students calculate the carbon stock of healthy vs. degraded steppe, discussing grassland restoration as a climate solution.
Participate in a traditional community dairy morning, helping herder families process milk into dried curds and fermented mare's milk.
Night sky observation session (begins 21:30). Students use a planisphere to identify constellations and record meteor trails. Return to Hohhot next morning, fly/train to Shanghai.
Xilamuren is an International Dark Sky Zone. Students measure sky darkness using the Bortle Scale and compare it to their home city — what are the ecological consequences of light pollution for nocturnal animals?
Leave a hand-drawn star map from the night sky session, pinned to the community board at the ger camp for the next visitors.
2-hour traditional Mongolian felt-making workshop — students card raw sheep wool, layer and roll it into felt using traditional tools, and produce a small coaster or pouch.
